In case you haven’t heard, yesterday was National Pie Day!

Who doesn’t love this baked dish made up from pastry dough and sweet filling? Oh, so yummy!

  1. Cranberry Apple Pie

Time needed: 6 hours

Serving: 8 people

Ingredients:

  • 453.6 g of peeled and sliced into thin pieces Granny Smith apples
  • 2 cups of fresh cranberries
  • 3/4 cup sugar
  • 3 tablespoons corn starch
  • 1 teaspoon grated lemon zest
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 9-inch basic flaky piecrust, unbaked
  • 1/2 cup granola
  • 4 tablespoons unsalted butter

Making the magic happen:

Step 1

Preheat the oven to 190 °C. In a large bowl, toss together apples, cranberries, sugar, cornstarch, lemon zest, cinnamon, and salt.

Step 2

Transfer the mixture to the pie crust. Top with granola and dot with butter.

Step 3

Bake until the apples are tender, 50 to 60 minutes. (If the top darkens too quickly, tent loosely with foil.) Let cool before serving.


  1. Sweet potato pie (for sweet potato lover!)

Time needed: 5 hours

Serving: 8 people

Ingredients: 

  • 1 pound sweet potatoes, peeled and cut into pieces
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 4 tablespoons unsalted butter, melted
  • 2 large eggs
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 9-inch basic flaky piecrust,
  •  unbaked confectioners’ sugar, for dusting

Making the magic happen:

Step 1

Preheat oven to 177 °C. Steam the potatoes for 15 to 20 minutes until they are tender. Do it in a steamer basket in a large saucepan.

Step 2

Using a food processor, puree sweet potatoes with heavy cream, sugar, butter, eggs, cinnamon, and salt until smooth.

Step 3

After pouring the mixture into the pie crust, set the oven to bake for 40 to 50 minutes until the center is set but still slightly wobbly. Let cool.

Step 4

Dust with confectioners’ sugar before serving.


 

  1. Lemon Cheesecake Pie

Time needed: 7 hours

Serving:  8 people

Ingredients:

  • 2 8-ounce bars cream cheese
  • 1 cup sugar
  • 1 cup sour cream
  • 2 large eggs
  • 1/3 cup lemon juice
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon kosher salt
  • 9-inch basic flaky piecrust, parbaked
  • 2 teaspoons thinly sliced lemon zest

Making the magic happen:

Step 1

Heat oven to 163°C. Using a food processor, process cream cheese, sugar, sour cream, eggs, lemon juice, vanilla extract, and salt until smooth.

Step 2

Pour mixture into the piecrust and bake 40 to 50 minutes until the center is set but still slightly wobbly. Let cool, then chill until firm, 4 to 5 hours. Top with lemon zest before serving.
